SANTIAGO: 1st Authentic south American Restaurant in Cebu

Cebu will soon be host to Santiago Restaurant of South America. the Philippines first and only food and beverage facility offering what has come to be known as the croassroad cuisine of the South American continent.

Santiago is probably the Philippine’s onle restaurant dedicated to South American Cuising and will be breaking ground first in the Cebu foosd scene. It is yet another reflection of the proponent of the President of the DAYS brand in the Philippines – young hotel owner and vibrant chef, Mr. James Concepcion’s personal proclivity gfor the unusual and the uncommon. Case In fact is his Ziggurat Food Temple in Makait where chef James has popularized the only authentic Indian, Medditerranean, African and Middle eastern (IMAM) cuisine selections and was touted by the Lonely Planet as it’s editor’s pick last June 2009. Cehf James now endeavors to launch Santiago first in Cebu making it the flagship location.

Santiago, the Restaurant, takes you on a south American adventure to the best of Brazil, Argentina, Chile, colombia, Peru, Ecuador, Uruguay, Venezuela, Bolivia and Guyana. Countries that most people do not even know but whose food also share some commonality with Filipino food. Utilizing INGREDIENTS like fresh seafoods, portk potatoes, corn, okra, rice and tropical fruits.

A casual surf of Santiago’s menu that is broad enough to cover a table for two boggles the mind and is likely to make the reader go hungry. Appetizers alone number some 62, Rice varieties come in 62 options. Entreees count some 40 items.

The crossroad character of South American cookery is further limned by the diversity of cultural and cuisinary influences of a veritable United Nations. The Incans of Peru not only built pyramids In the Andes, they compiled cookbooks possibly 6000 years ago. Spain then made its presence flet when it conquered the Incas and , at a later time, brought in Afritcan slaves who worked in the fields and further enriched the mix of South American cooking. The French followed and influenced the cuisine of upper classes – paving the way to South American Cuisine.

SANTIAGO
Even the restaurant’s name choice is a trove of trivia. Aside from his namesake, there is a santiago city in all South American coutries, and in Chile, its capital. In Britain, Santiago is James; iin most of Spain, Jaime; in Iberia, Iago; in GAlicia, Tiago to which San is prefixed creating Santiago, or St. James. Galicia in spain is home to the city of Santiago de Compostela where St. James’s body rests and has been a pilgrimage site for 1,200 years.

The unmistakable stamp of identity truly espouses the work put in the conceptualization of each recipe in the menu – the size of a continent.

Vamos a Santiago. The first in the Philippines. Opening in Cebu.
